: Brian Hanson is a bladesmith located in Washington State. He worked for over a decade as a fine dining chef in various Seattle restauraunts, but during Covid he made the decision to change careers and start working as a bladesmith. He now makes high performance kitchen knives that he hopes fellow chefs will love to use both at home and professionally in the kitchen.
The gyuto is modeled after the French pattern chef’s knife. Longer and slimmer than the santoku, it is an exceptional general purpose chef’s knife. It is perfect for slicing meats and proteins as well as chopping and dicing. Whether slicing onions, chopping vegetables, or portioning meats, this will be your go-to knife.
The damascus blade is forged from 1084 and 15n20 carbon steels to provide a long lasting edge. The damascus pattern is extremely engaging with lots of movement in the steel. The spine and choil are softened to provide a comfortable grip. Brian’s maker mark is on the right side of the blade. Because this knife is forged from carbon steels, we recommend camellia oil to oil the blade and natural wood handle.
The ambidextrous Japanese-inspired octagonal handle is formed from spalted Himalayan birch wood (Betula utilis). Himalayan birch is known for being used centuries ago in India as paper for writing lengthy scriptures and texts in Sanskrit. Its use as paper for books is mentioned by early Sanskrit writers as early as the 4th century CE. It was not replaced by more modern paper until the 16th century. The handle is finished with a buffalo horn ferrule and a steel spacer. This is a knife you won’t want to put down!
