: Andrew Smith began making knives in 2008 when he was only 15 years old. He started forging knives out of railroad spikes and tomahawks out of bar stock and ball peen hammers. For years this was all that he made. Today he makes all kinds of knives, but still has a deep love for making hawks. We were extremely pleased when we first met him at Blade Show 2021 and are excited to offer some of his work. Lately he has been trying his hand at hand forged chef knives, and the results are stunning!
This high performance chef’s knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef’s knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. The flatter profile of the back of the knife is perfect for chopping tasks. The 10-1/4 in. blade is perfect for the professional chef.
The W2 carbon steel blade is hand forged and features a meticulous hand rubbed satin finish. A differential heat treatment line separates the ultra hard cutting edge from a soft, supportive spine. W2 carbon steel is highly revered for its ability to hold an excellent edge coupled with good toughness and chip resistance. Andrew’s mark is on the left side of the blade.
Showing his tremendous skill at the forge, the bolster is integral to the blade. Though this technique is regularly done in production knives, forging an integral bolster in a custom setting is extremely difficult and shows the maker’s skill at its best. This technique allows the weight of the knife to be more center balanced.
The dyed and stabilized maple burl handle has exceptionally beautiful figure. By using stabilized wood, Andrew ensures the handle will hold up well to the harsh demands of a professional kitchen. Bronze and black fiber spacers will help the handle adjust to humidity and temperature changes. This knife has tremendous balance — it is a knife you won’t want to put down!
