Bunka are a Japanese general purpose knife used for a wide range of common kitchen tasks. These can be used anytime a gyuto or santoku might be called for. The triangular tip, sometimes called a kiritsuke tip, results in a detail oriented, yet stronger tip than the gyuto. From chopping to slicing, like santoku, bunka are a tremendous general purpose knife in the kitchen. This is sure to become your goto knife!
Pina began forging this integral chef’s knife from 1080 and 15N20 carbon steels. The bold twisted, crushed Ws damascus is immediately captivating and draws attention for closer examination. Because this knife is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation. By forging closely to shape, he ensures optimal grain structure for a keen, long lasting edge. The blade is beautifully thin for clean, perfect cuts.
The bolster is integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith.
The handle is presentation grade spalted maple that is brought to a high polish. The stabilized spalted maple will hold up well to the demands of either a professional or home kitchen. Black and red G10 spacers assist the handle adjust to humidity changes.
