: Ben Akinis a custom knifemaker from Washington State. His knives are exceptionally well designed and tested. His attention to detail is clearly evident in each of his creations. He is a member of the American Bladesmith Society, the Idaho Knife Association, The Oregon Knife Collectors Association, and the Montana Knifemakers Association. He both forges and stock removes his knives.
You can think of a paring knife as a smaller version of a chef’s knife because a paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you’ll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade is high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. The flat grind provides a very efficient cutting geometry. Ben’s touchmark is on the left side.
The handle is presentation grade Arizona desert ironwood, set on a full tang. Desert ironwood (Olneya tesota) is a rare wood that is only found in the valleys of the Sonoran Desert below 2,500 foot elevation. It is among the most desirable of exotic woods used for knives. This dense wood is both dramatic and has tremendous stability. The handle is sculpted to provide a comfortable, non-slip grip.
