: This chef’s utility knife was made by Gabriel Mabry (Doberman Forge) of Albemarle, North Carolina. Gabriel has a wide variety of skills from his background as a USMC marine, professional chef, restaurant owner, and certified welder. This chef’s utility knife is a perfect choice for detail tasks such as cutting the eyes out of potatoes or the heads off tomatoes and strawberries. The taller profile makes it great for detailed chopping tasks such as mincing garlic and shallots or portioning meats.
The 4 inch blade is AEB-L stainless steel with a hand rubbed satin finish. AEB-L is ultra high performance — combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you’ll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The distal tapered blade creates a perfect balance. Corners of the spine are rounded for comfort.
Handle scales are stabilized green Dymondwood, secured to the full tang using bronze pins. The scales are domed providing a secure, comfortable grip. This dense, stabilized wood will hold up very well to the harsh demands of a professional kitchen. Like other knives, this knife should not be put in the dishwasher.
